Our apple trees did extremely well this year. We’ve had apple pie, apple crisp, apple cider, applesauce, and I’ve been regularly making this delicious Apple Walnut Bread. The recipe is gluten-free, dairy-free, and makes two loaves.

Ingredients

  • Four eggs
  • 1 ½ C brown sugar
  • 1 C of unsweetened applesauce
  • ⅔ C oil of your choice (I use grapeseed)
  • 1 ½ C white or brown rice flour (or a combination of the two)
  • 1 ¼ C tapioca flour
  • 1 C sorghum flour
  • 1 C almond meal
  • 4 t baking powder
  • 1 t xanthan gum
  • 1 t cinnamon
  • ¾ C chopped walnuts
  • Optional: cinnamon sugar for pans (see directions below)

Directions

Preheat oven to 350 degrees.

Whisk eggs together. Add brown sugar and mix until combined. Add applesauce and oil and continue mixing.

Whisk together all dry ingredients including walnuts in a separate bowl. Add to the applesauce mixture and mix until well combined.

Grease loaf pans.

Optional: Sugar the pan after greasing to keep the loaves from sticking and to give them a sweet, crunchy crust.  Sprinkle in white sugar or a cinnamon-sugar mix.  Tip sideways and tap until bottom and sides are coated.  Tap out any extra.

Grease the pans and sprinkle inside with cinnamon sugar.
Cinnamon and sugar give the loaf a sweet crunchy crust.

Divide batter between the two pans and bake at 350 degrees for about an hour or until toothpick inserted in middle of loaf comes out clean.
