These Cinnamon Nut Granola Bars are soft and chewy. Not too sweet, they’re a simple and a delicious alternative to store bought bars. The recipe makes an 8 x 8 pan of bars, so you’ll get 10 – 12 bars depending on how you cut them.

Ingredients

  • 2 eggs
  • ½ C almond butter
  • ½ C brown sugar
  • 1 t cinnamon
  • 1 t vanilla
  • 1 ½ C oats
  • 1 C chopped nuts (I use a combination of almonds, walnuts, and pecans)

Directions

Preheat oven to 350 degrees.

Whisk the eggs together. Add almond butter, brown sugar, cinnamon, and vanilla and mix. Then add nuts and oats. Mix until thoroughly combined.

Line an 8 x 8 baking dish with foil. Grease the foil and then spread the granola bar mix in the pan.

Place a piece of wax paper on top of the granola bar mix. Put a book that fits inside the pan on top of the waxed paper. Press down on book with hands or step on the book if you prefer. Move the book around and keep pressing down until the batter is evenly compressed.

Bake your Cinnamon Nut Granola Bars at 350 degrees for 22 – 24 minutes or until edges start to brown.

Allow to cool completely and then remove from pan by lifting with foil. Use a sharp knife to cut into 10 bars.
