Say hello to my Gluten-Free Chocolate & Salted Caramel Cookies – you’ll be glad you met them. The proportions of salted caramel, chocolate, and brown sugar give them a tasty blend of sweet and salt that our friend Goldilocks might say is “just right”. The recipe makes about three dozen cookies.

Ingredients

  • 8 T butter, melted
  • 1 C brown sugar
  • 2 eggs
  • 1 ½ C brown rice flour OR white rice flour (or a combo of both)
  • 1 C tapioca flour
  • ¼ C sorghum flour
  • ¼ C cocoa powder, unsweetened
  • 2 t baking powder
  • ½ t xanthan gum
  • 1 C chocolate chips
  • ½ C salted caramel chips

Directions

Preheat oven to 350 degrees.

Whisk flours, cocoa powder, baking powder, and xanthan gum together in a bowl. Set aside.

Mix together melted butter, brown sugar, and eggs. Add flour mixture and mix until combined. Add chocolate and salted caramel chips and mix until evenly distributed.

Use hands to press dough into one inch balls. Flatten to ½ inch discs and place about one inch apart on parchment-covered baking sheet. Bake at 350 degrees for 12 – 14 minutes. Remove from oven and cool on wire rack.
