I’m a big fan of dark chocolate M&M’s, but you can use any type (or organic alternative) you prefer for these Gluten-Free M&M Cookies. I created this recipe with a lower proportion of sugar to compensate for the sweetness of the M&M’s. The result is 3 ½ dozen cookies that are ‘just right’.

Ingredients:

  • 1 C butter, softened
  • 1 C brown sugar
  • 3 eggs
  • 1 ½  C white rice flour
  • 1 C tapioca flour
  • 1 C sorghum flour
  • ½ C almond flour
  • 1 T baking powder
  • 1 t xanthan gum
  • 10 oz bag of M&M’s
  1. Preheat oven to 350 degrees.
  2. Mix butter and brown sugar. Add eggs and mix thoroughly.
  3. Whisk together flours, baking powder, and xanthan gum in a separate bowl.
  4. Add flours mixture to butter, brown sugar, and eggs. Mix until smooth.
  5. Add M&M’s and mix to distribute evenly through the dough.

Roll into one-inch balls and then press to 1/2″ thickness on a parchment-covered baking sheet.  Bake your Gluten-Free M&M Cookies at 350 degrees for 13 – 15 min.
