These Gluten-Free Spice Cookies are a crispy warming treat on a chilly winter day, with cinnamon, cloves, ginger, and molasses. They’re also dairy-free! The recipe makes about three dozen cookies.

Ingredients

  • ¼ C oil (I use grapeseed oil)
  • 1 C granulated sugar
  • 2 eggs
  • ¼ C molasses
  • 1 ¼ C tapioca flour
  • 1 C white rice flour
  • ½ C sorghum flour
  • ¼ C almond flour
  • 2 t baking soda
  • 1 t xanthan gum
  • 1 t cinnamon
  • ½ t cloves
  • ½ t ginger
  • About ¼ C additional white sugar for rolling cookie dough balls in before baking

Directions

Preheat oven to 375 degrees.

Mix together oil and sugar. Add eggs and mix. Add molasses and mix.

In separate bowl, whisk together all flours, soda, xanthan gum, and spices.

Add the flour mixture to butter and sugar mixture. Mix until thoroughly combined.

Scoop up dough with a spoon and use your hands to roll your Gluten-Free Spice Cookies into ¾” balls. Roll each ball in granulated sugar. Place on parchment covered baking sheet 2″ apart.

Bake at 375 degrees for 12 – 14 minutes.
