My favorite way to eat these gluten-free brown sugar walnut cookies is fresh from the oven. Warm and walnut-y with just the right amount of brown sugar!

Ingredients:
- 4 T butter
- ¾ C brown sugar
- 1 egg
- 1 t vanilla
- 1 C white rice flour
- ½ C tapioca flour
- ½ C sorghum flour
- 1 t baking powder
- ½ t xanthan gum
- ½ C chopped walnuts

Directions:
Preheat oven to 350 degrees.
Melt butter. Add brown sugar. Mix until combined. Add egg and vanilla and mix again until thoroughly combined.
Mix dry ingredients in a separate bowl. Add dry ingredients and chopped walnuts to butter, brown sugar, egg, and vanilla. Mix until combined.

Shape into one-inch balls and flatten to ½” thick rounds. Bake at 350 degrees on parchment covered sheet for 10 – 12 minutes.
