When you need a double dose of chocolate, make these Gluten-Free Double Chocolate Cookies. Rich, dense, and not-too-sweet, these cookies are super satisfying. The recipe makes about three dozen cookies.

Ingredients

  • 8 T butter, melted
  • 1 C brown sugar
  • 2 eggs
  • 1 ¼ C brown rice flour OR white rice flour (or a combo of both)
  • 1 C tapioca flour
  • ¼ C sorghum flour
  • ¼ C cocoa powder, unsweetened
  • 2 t baking powder
  • ½ t xanthan gum
  • 1 C chocolate chips

Directions

Preheat oven to 350 degrees.

Whisk flours, cocoa powder, baking powder, and xanthan gum together in a bowl. Set aside.

Mix together melted butter, brown sugar, and eggs. Add flour mixture and mix until combined. Add chocolate chips and mix until evenly distributed.

Use hands to press dough into one inch balls. Flatten to ½ inch discs and place about one inch apart on parchment-covered baking sheet. Bake at 350 degrees for 12 – 14 minutes. Remove from oven and cool on wire rack.
