Here’s a great alternative to sugar-laden holiday treats – Gluten-Free Holiday Graham Crackers. Cut them out in your favorite holiday shapes and enjoy with coffee, tea, or hot cocoa. Of course, you can always add sugar sprinkles and frosting if you like. The recipe makes about a dozen and a half 2½ x 3″ crackers.
Ingredients
- ¾ C brown rice flour
- ½ C sorghum flour
- ½ C tapioca flour
- 1 t cinnamon
- 1 t baking powder
- ½ t xanthan gum
- 8 T butter, chilled
- ¼ C honey
- 2 – 4 T cold water
- Optional – sugar or cinnamon sugar to sprinkle on top before baking
Directions
Preheat oven to 325 degrees.
Whisk together all dry ingredients.
Grate butter. Add grated butter to dry ingredients and gently toss until coated. Use fingers to rub together until mixture is uniform.
Add honey and mix with a fork. Add 2 T water and continue to mix. Switch to mixing with hands. Add 1 – 2 more tablespoons of water as needed, just enough to get the dough to come together in a ball.
Roll out dough on a pastry cloth or parchment paper to about ¼” thickness. Sprinkle with additional brown rice flour if dough is sticking to rolling pin or pastry cloth. Use cookie cutters to cut into holiday shapes. Transfer to parchment covered baking sheet.
If you want to sprinkle some sugar or cinnamon sugar on top, now’s the time to do it.
Your baking time will vary depending on how much water you added and how thinly rolled your dough is. Start by baking for 16 minutes at 325 degrees. If your edges are thinner than the center, move the graham crackers apart. Take out any that are done and return the rest to the oven to bake for up to 5 additional minutes.
Allow to cool and add icing if desired.
