These homemade gluten-free honey graham crackers are the perfect treat when I want something just a little sweet. The recipe is pretty straightforward and, if you’re fine with imperfect shapes, it’s fast as well. Make classic rectangles if you want but I assure you that, no matter the shape, they’ll taste good. The recipe makes about a dozen and a half 2½ x 3″ crackers.
Ingredients:
- ¾ C brown rice flour
- ½ C sorghum flour
- ½ C tapioca flour
- 1 t cinnamon
- 1 t baking powder
- ½ t xanthan gum
- 8 T butter, chilled
- ¼ honey
- 2 – 4 T cold water
- Optional – sugar or cinnamon sugar to sprinkle on top before baking
Directions:
Preheat oven to 325 degrees.
Whisk together all dry ingredients.
Grate butter. Add butter to dry ingredients and gently toss until coated. Use fingers to rub together until mixture is uniform.
Add honey and mix with a fork. Add 2 T water and continue to mix. Switch to mixing with hands. Add 1 – 2 more tablespoons of water as needed, just enough to get the dough to come together in a ball.
Divide dough in half. Roll each dough out on parchment paper to approximately 8 x 12″ rectangle (a little less than ¼” thick). Use a piece of waxed paper or plastic wrap on top to keep the dough from sticking to your rolling pin.
If you want, you can work to get all your edges straight and rectangular. I prefer to leave them ‘rustic’ looking.
Slice into squares or rectangles and then poke with a fork. I’m pretty sure the holes are essential. 🙂 If you want to sprinkle some sugar or cinnamon sugar on top, now’s the time to do it. After you sprinkle the sugar on top, press it in lightly with your rolling pin.

Your baking time will vary depending on how much water you added and how thinly rolled your dough is. Start by baking for 20 minutes at 325 degrees. If your edges are thinner than the center like mine usually are, move the graham crackers apart. Take out any that are done and return the rest to the oven to bake for up to 10 additional minutes.
