These gluten-free salted caramel chocolate cookies have a perfect balance of flavors. Not too much nor too little salted caramel, chocolate, and brown sugar give them a tasty blend of sweet and salt that our friend Goldilocks might say is “just right”.

A perfect mix of salted caramel chips, cocoa powder, chocolate chips, and brown sugar combine to make a delicious cookie.

Recipe makes about three dozen gluten-free salted caramel chocolate cookies.

Ingredients:

  • 8 T butter, melted
  • 1 C brown sugar
  • 2 eggs
  • 2 C white rice flour
  • 1 C tapioca flour
  • ½ C sorghum flour
  • ¼ C cocoa powder, unsweetened
  • 2 t baking powder
  • 1 t xanthan gum
  • 1 C chocolate chips
  • ½ C salted caramel chips

Directions:

Preheat oven to 350 degrees.

Whisk flours, cocoa powder, baking powder, and xanthan gum together in a bowl. Set aside.

Mix together melted butter, brown sugar, and eggs. Add flour mixture and mix until combined. Add chocolate and salted caramel chips and mix until evenly distributed.

Use hands to press dough into one inch balls. Flatten to ½ inch discs and place about one inch apart on parchment-covered baking sheet. Bake at 350 degrees for 12 – 14 minutes. Remove from oven and cool on wire rack.
