This gluten-free yeast bread has an excellent texture and taste. We love it fresh from the oven with soup or toasted and topped with butter and honey. The recipe makes two loaves. It takes about 20 minutes of actual work and a little under two and a half hours from start to finish.
Ingredients:
(Ingredients are listed in the order you will be using them.)
- ½ C milk
- 1 C water
- 3 t active dry yeast
- 1 t sugar
- 2 T butter, melted
- 2 eggs
- 2 C white rice flour
- 2 T ground psyllium husk
- 2 T sugar
- 1 t baking powder
- ½ t salt
- ¾ C warm water
- 1 C oat flour
- ¾ C tapioca starch
- ¾ C potato starch
Directions
In small bowl, warm ½ cup milk in microwave or on stove top until bubbles form on edges and steam rises. Typically, this takes about 30 seconds in the microwave. Set aside and allow to cool.
In a separate small bowl or measuring cup, proof yeast by putting it and the 1 t sugar in 1 C warm water (about 115 degrees) for 5 – 7 minutes. Yeast will dissolve and foam up.
In a large mixing bowl, use whisk or hand mixer to combine melted butter and eggs. Add milk and proofed yeast mixture to butter and eggs.
In a separate bowl, whisk together white rice flour, ground psyllium husk, sugar, baking powder, and salt in a medium-sized bowl. Add to yeast mixture all at once and mix until combined. You can use an electric hand mixer or stand mixer for this.
Mix in ¾ C of warm water.
Once again, use a separate bowl and whisk together oat flour, tapioca starch, and potato starch. Add all at once to the large bowl and mix until thoroughly combined.
Note: The dough for your gluten-free yeast bread will be very thick and will need to be tapped off your beaters. However, it shouldn’t be so thick you can’t tap it out. when our weather is very dry and the humidity is low, I do need to add up to an extra ¼ C of water.
Scoop out into two greased 4 x 8” loaf pans. Set pans in a warm place to rise for about 30 min or until dough rises up above top edge of pans.
Preheat oven to 350.
Bake at 350 for 1 hour and 5 minutes.
Remove from pans and allow to cool before slicing.
