I love adding these Homemade Cinnamon Baking Chips to cookies, scones, muffins, and more. They’re easy to make and it’s a heck of a lot cheaper than buying them. The recipe makes about 2 cups of baking chips.
There are other similar recipes out there. This is just my variation based on what I have in my cupboards. I’ve noted some substitutions below in case your cupboard contents don’t match mine.
Ingredients
- ⅔ C sugar
- 3 T cinnamon
- 2 T solid coconut oil
- 2 T light corn syrup
- ½ t vanilla
Substitutions I’ve seen but have not tried: solid shortening for coconut oil, honey for light corn syrup.
Directions
Preheat oven to 200 degrees.
Mix sugar and cinnamon with a fork. Add wet ingredients and continue to mix. Switch to mixing with hands if needed to thoroughly combine. (You could use a food process for this but it doesn’t seem worth getting it dirty.)
Put dough on a piece of parchment paper. Put a piece of wax or parchment paper over the cinnamon dough and roll to about ⅛” thick (about the height of two quarters stacked on top of each other).

Remove top sheet of wax or parchment paper. Bake on a pan at 200 degrees for about 35 minutes. You can decrease the baking time if you like them softer and increase it to about 40 – 45 minutes if you like them crispier.

Remove from oven and allow to cool completely and firm up. Cut into chunks and then add your homemade cinnamon baking chips to whatever you like – pancakes, cookies, breads, and more.
