Here’s a quick and cool summer treat. We take these No-Bake Energy Bites to the lake and camping and keep them in a cooler. The recipe makes about 30 one-inch balls.

Ingredients

  • 1 ½ C rolled oats*
  • ½ natural nut butter (I use peanut or almond, but cashew is yummy if you feel like splurging)
  • ⅓ C honey
  • ½ C chocolate chips (mini or regular size, dairy-free if you prefer)

*If your nut butter is on the dry side (as freshly ground nut butters occasionally are), decrease the amount of oats. Start with 1 C of oats and add more as needed.

Directions

Mix all ingredients together. You want the dough to stick together and be fairly firm. If you put too many oats in, I suggest adding more nut butter. I think they get too sweet if you use additional honey.

Chill the dough in the refrigerator for at least one hour. If you skip this step, you’ll be dealing with a big sticky mess that won’t roll into balls.

If making No-Bake Energy Bites is a last-minute decision, put portions in individual containers and take some spoons. Yes, I’ve done that.

If you planned ahead and had time to refrigerate the dough, you can now easily roll it into balls and then put them in your refrigerator or cooler. I store them with wax paper between the layers.
