Treat yourself to these brilliantly delicious Orange Chocolate Scones. They’re gluten-free and also dairy-free if you use dairy-free chocolate. The recipe makes nine scones.
Note: One orange should yield enough juice for the scone and icing ingredients.
Ingredients
- 2 eggs
- ½ C sugar
- ¼ C oil (I use grapeseed)
- ¼ C squeezed orange juice
- 1 C tapioca flour
- ¾ C almond flour
- ¾ C brown rice flour
- ¾ C sorghum flour
- 2 t baking powder
- ½ t xanthan gum
- ½ C mini chocolate chips (dairy-free, if desired)
- grated orange zest (from one orange)
Optional Orange Icing:
- 1 T orange juice
- ¼ C powdered sugar
Directions
Preheat oven to 375 degrees.
Lightly beat eggs. Continue to mix, adding sugar. Add oil and orange juice and mix.
Whisk together all flours, baking powder, and xanthan gum in a separate bowl. Add to egg mixture and mix until combined.
Add chocolate chips and orange zest and mix thoroughly.
Spoon into nine equal portions onto parchment paper covered baking sheet. Leave as drop scones or lightly wet fingers and shape the dough into rounds or triangles. Scones should be about ¾ inch thick.
Bake at 375 degrees for 18 – 20 minutes.
Orange Icing
Mix powdered sugar and orange juice. Spread on scones with a spatula or put in a plastic bag with the corner cut off and squeeze to drizzle over your Orange Chocolate Scones.
