Treat yourself to buttery baking powder biscuits with cinnamon baking chips. You can purchase the chips or make your own with my easy recipe (see link below). This recipe makes a dozen Quick Gluten-Free Cinnamon Biscuits.
Note: This recipe calls for cinnamon baking chips, not the cinnamon morsels similar to chocolate chips. Although you can buy them, they’re also very easy to make (recipe here).
Ingredients:
- ¾ C milk
- 1 t apple cider vinegar
- 8 T butter, melted
- 1 ¼ C white rice flour
- 1 ¼ tapioca flour
- ¾ C almond flour
- ¼ C sugar
- 3 t baking powder
- ½ t xanthan gum
- ½ t salt
- ¼ C cinnamon chips (purchased or use this recipe)
Directions:
Preheat oven to 425 degrees.
Mix milk and vinegar. Set aside.
Melt butter in large mixing bowl. Set aside.
In a separate bowl, whisk together all dry ingredients except the cinnamon bits.
Add flour mixture to melted butter and mix until butter is evenly distributed. Drizzle milk and vinegar mixture over top and mix until combined. Finally, stir in the cinnamon bits.
Use spoon to scoop your batter onto a parchment paper covered pan. Make twelve biscuits about 2″ round and ½” tall. Leave as drop biscuits or, if desired, gently pat into rounds with fingers.
Bake at 425 degrees for 10 – 12 minutes. These Quick Gluten-Free Cinnamon Biscuits are best eaten fresh out of the oven.
