These gluten-free granola bars require a special technique – you stand on the mixture to compress it to the right consistency. If that doesn’t appeal to you, you can use your hands to flatten them with a little more effort. Regardless of your method, these bars are a great snack to take on your adventures.

The recipe makes about 9 bars (2 ¼ x 2 ¼ inches).

Ingredients:

  • ½ C natural almond or peanut butter
  • ½ C honey
  • 2 C rolled oats
  • ¾ C chopped nuts, any (can be one type or a mix of nuts)
  • optional up to ½ C add-ins (mini chocolate chips, dried fruit, etc.)
  • AND – a book that will fit inside your pan

Preheat oven to 325 degrees.

Mix almond butter and honey.  Add oats, nuts, and any other add-ins.  Mix until thoroughly combined.

Grease 8” x 8” pan. Spread mixture in pan.  Put waxed paper or parchment paper over mixture.  Put a book or smaller pan on top of waxed paper. 

This has become my ‘granola bar book’.

Stand on top of book to compress granola bars.  Move book around and continue to stand on it until evenly compressed. (Or, use your hands to press down on the book.)

Bake at 325 degrees for 22 – 24 minutes or until edges start to brown slightly.  Let cool completely before cutting. Store in individual bags for take-along snacks.
