Start with this three-ingredient recipe and add your preferred spices to make gluten-free meatballs for dishes like spaghetti and meatballs or meatball stroganoff. This recipe makes about 36 meatballs.
Ingredients:
- 1. 5 pounds of ground turkey or beef
- 2 eggs
- 1 C gluten-free bread – small cubes or crumbs (see tip below)
Suggested seasonings:
- 1 T Italian seasons (oregano, marjoram, thyme, basil, rosemary, sage)
- 1 t dried garlic
- 1 t dried onion (or ½ C chopped fresh onion, sauteed until tender)
- ½ t salt
- ½ t pepper
Preheat oven to 375 degrees.
Mix eggs. Add ground meat, bread crumbs, and seasonings. Mix until thoroughly combined. Shape into one-inch meatballs. Bake on a foil-covered pan for 18 – 20 minutes.
I often make a double batch of these and freeze half of them. We prefer to use the ground turkey meatballs for spaghetti and meatballs, while the ground beef is good for meatball stroganoff.
Breadcrumbs: I periodically buy a loaf of good quality plain white gluten-free bread, slice it up into small cubes, and put them in the freezer in a freezer bag. Then, when I want to make meatballs or another recipe requiring bread crumbs I just pull out the bag.
Seasonings: The list above works well for both spaghetti and stroganoff. I’ve experimented with Indian spices as well though.
